Saw your white layer cake at Wegman's Hunt Valley, MD last week right before Thanksgiving. Wasn't sure if we should get it; I have been adapting many recipes since our family has become gluten free and I am a pretty good baker. Most of the commercial gluten free cakes are heavy and grainy and not tasty at all. Wegman's had a dollar off special, and we bought it, and it was amazing! Just wanted you to know...I hope they will carry your other products that I saw on your site -- pizza crust, onion rolls....Your buttercream icing was delicious ,and the cake was delicious with a lovely texture.
I will buy your stuff anytime! Dollar discount was a great intro, and your product is excellent.

I just found out last week that I need a gluton free diet. I love to cook and to be creative so I was ready for the challenge. I bought your frozen dough at Whole Foods.
Tonight I made a typical gluten pizza for my family and then I made a pizza made with your gluten free dough for myself assuming my family wouldn't like it.
My husband sampled my pizza made with your dough and loved it. As a matter of fact, I don't think I'll need to make two separate pizzas anymore. You won everyone over. My husband is a very selective eater, so that is saying something.
Then I go to your website and see all your other products. You can count on our business. Can't wait to make our first order.

Hello,
I am writing to extend my enthusiastic compliments about your wonderful
pasta products. I see there are online sources for other styles than
what I tried, the spaghetti. That's even better news! Gillian's
spaghetti is by far the best non-gluten wheat-free pasta I have ever
tasted, and you have returned me to my family fold unwittingly! You see,
I am Italian, from two sides of Italian chefs and restaurateurs,
caterers, food service businesses, importing et al, and I am a trained
chef myself in Bolognese cuisine. When I discovered that I had a
pronounced intolerance for wheat products, I began trying the standard
brands of non-gluten non-wheat products and ran through just about
everything, finally resigning myself to the fact that pasta was off my
menu and my diet.
Well, I am happy to say that I am busy working on some new recipes,
including a non-gluten lasagna, thanks to discovering Gillian pastas. I
also discovered that the liquid can be saved as used as a milk
substitute in other recipes, as well as cold on cereal.
Thanks so much for creating these great pastas and I look forward to
using each of them in creating a new menu.

I was diagnosed with celiac disease about five years ago. I have tried different breads and they all taste like pasted cardboard until i tried your french rolls. They are just delicious. I used them as a hamburger bun and i was it to my satisfaction. I found them at a Blooms grocery store in Virginia. I plan to buy some more of your products in the near future. I have been trying to eat gluten free for about 5 years now. The first gluten free bread that i found frozen, but readily available, had to be toasted. It tasted like cardboard and for a small fee, my gums were shredded. I also found myseIf becoming adept with a hammer and chisel. Since then i have found better bread and some really good gluten free recipes; but I have arthritis and don't often feel like baking anymore. The ingredients are expensive. It's like being robbed every time i go for groceries. But when I bought your gluten free french rolls, they were soooo good. At least while I'm going bankrupt on a gluten free diet, I can enjoy my dinner now. I was extremely happy to see that your mix is very reasonably priced, something that I never find. I hope other people find their way to your bread and that you will forever ever raise the bar for the gluten free standard. My dream is that some day, bread of this calibre will be found on the shelf of every local publix or kroger. I know that I will recommend you to everyone out there. To whom it may concern,
I was recently diagnosed with both lactose and Gluten allergies.
Since then I have been trying out MANY different bread products and found NONE to be anything more than "flavored" cardboard!
Imaging my surprise and delight when I tried out your Cinnamon Raisin and regular diner rolls.
First off, neither roll disintegrates upon handling or buttering. They are not only...just edible, but they are actually DELICIOUS.

Thank you, thank you. After 6 or 7 years of making GF foods for my husband, he was finally able to enjoy meatloaf. He has been eating your French Rolls for several years, but it was only recently that I thought to try them in meatloaf and meatballs. FANTASTIC! I just defrosted them, broke them into chunks and soaked them a bit, just the same as I used to do with bread. Meatballs on Superbowl Sunday too. The whole family is happy to eat these comfort foods again. We are grateful for your delicious products.

Dear Chef Bob,
I want to drop you a line and thank you for your great products. I have MS and the latest theory (as stated in "The MS Recovery Diet" is that MS is caused by allergies from wheat/gluten and dairy. Since the doctors can't find any cause, like a virus, and many people have recovered after eliminating wheat and gluten from their diets, it makes sense.
The problem for me was to find bread, which I love, to use on veggie burgers and sandwiches that doesn't fall apart like most gluten free products. But when I found your French rolls, I was surprised that tasted great and didn't crumble and they are big enough for burgers and such.

I am a recently diagnosed Celiac patient and as I started the journey last week in Wegmans and Whole Foods organic section, to better health for the first time in many years I soon learned that the Gluten Free trip was going to be quite an adventure. I wanted to write you and personally praise your company for the amazing products you carry for patients who have limited diets. I reluctantly purchased a package of your Cinnamon Raisin Frozen (bagels) and thought for sure that this too would be another tasteless cardboard textured bread that would get tossed into the trash. When I popped one in the toaster and then had the pleasure of enjoying it with a cuppa green tea I was so amazed at how delicious it was. My husband could smell it from across the house and asked if I would make him one too. When I told him it was my gluten free buns he grimaced but said make me one anyway and I'll try it. I can't keep him out of my bag now and being on a budget with the Army I find I now have to hide my Gillians from him because a GF diet is a bit more costly then most.

WOW!!!! Thanks alot guys!!! I just ate a pizza that I made from your frozen gluten free pizza crust mix. And it was Unbelievable! That is the best GF I've ever had hands down. I've tried all the brands from Kinnikinnik to Amy's and some pizza's from the local pizzarias that sell gluten free and I gotta say - your's wins! I just had to email you and let you know. I haven't emailed a gluten free company yet to comment on their products because alot of what I've tried is just ' good enough' considering it's GF but I really have to say that your crust is actually great tasting but also the texture is what really stands out. It actually has a chewy texture and mouthfeel and best of all, it doesn't disintegrate when I pick it up like most do. I'm now committed to trying as much as I can from you guys. If you can make a pizza crust like that I can't wait to try your other products.

I first encountered Gillian's at our local Legal Seafood, and felt like I was enjoying 'bread' for the first time in the 2 years since my diagnosis with celiac. The chef came out and proudly explained the origin of the rolls and how to find some for home, here on your website. I cannot explain how much it means to me to have the smell, texture, and flavor of true bread again. I tried so many other GF breads, and really thought I would have to live without the satisfaction a perfect piece of warm, buttered, yeast bread can offer.

I wonder if you remember me. It was in the 90's, after Gillian was diagnosed with CD, and my mother and I drove from Malden to your home, where you baked GF goodies in your own home for your daughter. At that time, I was a teacher in NY and Gillian was a child; I loaded up on your fresh-out-of the oven goodies before I left the Boston area to drive home.
Having been diagnosed as a celiac back in the mid-70's, I was hungry for decent bread products. Yours were so great! Now, every time I give a free workshop at the local health food stores, I tell them my personal story of how I met you and your family. Then I point out your products in the store and tell the attendees that your foods are my favorite.
I would like to honor you and your family for the incredible time and energy it has taken for you to get to be a national distributor, just like the "big boys." I have just discovered your frozen deep-dish pizza crust and I made a pizza as soon as I got home. WOW! The crust has a great texture, taste, and it can hold up to the sauce without getting soggy. I could even slice it in half to make a pita-type sandwich. Thanks for expanding your product line and continuing your tradition of excellence at a reasonable price.

WOW!!! YUMMY!!! Oh my gosh, I cannot believe I have found a bread that is wheat free and is sooooo delicious!!! I recently found out I am "wheat intolerant." I have Crohn's disease and have never been told that wheat may at least be partially responsible for the pain I have. Recently, I switched doctors and she suggested I try a wheat-free and milk-free diet. In the few weeks that I have done so, I am feeling much better. However, my favorite food in the past has been white bread and pizza (white flour pizza). Needless to say, this has been the hardest for me to give up.
I purchased Gillian's Foods French rolls at my local Food Lion (which is a surprise in and of itself that they carry so many gluten-free and organic products :). I tried them last night and so did my husband who is not on a wheat-free diet. They were the best!! I just cannot say enough about how good they were. I cannot wait to try some of your other products!!
All I can say is thank you so much for putting the time and effort into make a quality bread product that is truly gluten-free. You can be sure I will tell my doctor about your products so that she can recommend them to her other patients.

Whoever came up with the recipe and the way of baking those rolls was a genius. (You're motto is apt as well.) The problem is that now, there is no going back to the other stuff because it is so crud awful in comparison. Those French rolls are scrump-deli-icious: 30 seconds in the microwave out of the freezer and they are perfect -- the crust on heel (bottom of roll) as an edge to it -- it's firm not soggy. And the consistency of the rest of the roll is as if it's oven-fresh. You've spoiled me for life. With Celiac, it is so difficult to get decent -- if any -- bread products. Unless a bakery is a dedicated as a gluten-free facility, then cross-contamination is not a mere risk, it is guaranteed to occur. So, thank you a thousand times over for creating something so good to eat. Those raisin cinnamon rolls make the best breakfast: 14 grams of yummy protein!
Your rolls -- cinnamon raisin and French -- are the best bread products I have ever eaten. KUDOS. Hat's off. Truly, Thank you. Pamela |

I am a Celiac suffer for over 8 years diagnosed and almost 20 years before diagnosis. Even though there have been products within the last few years that have been palatable, breads and rolls really have not been anything to write home about. I am now writing to you!! I have just discovered your French Rolls. They are wonderful and taste "regular". The consistency is good to to spread things on. Yeah!! Unfortunately my store only carried that one product of yours. I live in Northwest Broward County in Florida. The shipping and handling of $8.00 is steep for me, but I will be looking for other stores in my area for more products!!!

I am honored that you would post my letter. I have circulated your website to my doctors and a few G.I. friends. There seems to be a growing population of gluten intolerant non-celiac sufferers, in fact, my doctor's wife has been tested (like my self) for celiac and tested negative, but she can not in any circumstances consume anything containing wheat.

I am on a gluten free, dairy free detox diet and the choices of bread were pretty dismal. Most were akin to sawdust until I found your French rolls. I love bread, and was wondering how I was going to stick to my maintenance diet without my beloved bread, but your French rolls are divine. I actually prefer them to most of the bread I used to eat. I was visiting Utah in April and was getting a bit desperate about my Gluten-free diet when I was told about some shops that specialized in things like gluten free foods. Amongst other items I found a pack of Gillian's frozen white bread rolls. I just wanted to tell you how impressed I was by them. They are easily the best gluten-free bread rolls I have experienced, far superior to anything I've found in England so far - and it made my visit to America much easier as I was able to take food out with me. Having been diagnosed over 36 years ago and having an older sister with the same condition who was a 'guineapig' for the newly introduced gluten free diet over 50 years ago, I know only too well how unpalatable some g.f. foods have been. I discovered I have celiac disease approx. 3 yrs. ago. This was both a blessing and a curse. A blessing, because I finally knew what was wrong with me and began feeling better almost immediately upon starting a gf diet. A curse, because it seems everything under the sun contains gluten. Anyway, I have been on "the quest" for really good gf products from day one. I started out making many of the staples and have had success with most. There remained a few that I have yet been able to make well or find any ready made items that taste good. Loaf breads and pizza crust. I discovered your French rolls at my local health food store. They are fantastic!! The first time I ate one I couldn't believe it! I even use(d) them to make mini pizzas. Not anymore. Last week I saw your frozen pizza crust dough and decided to give it a try. Oh, my! I haven't had a good pizza in three years. (I wanted to cry...I love pizza and have missed it.) I usually eat 2 or 3 slices. I took the first bite and was in pizza eating heaven. I really had to restrain myself not to eat the entire thing. I froze the additional slices and will enjoy 4 meals of delicious pizza from just one dough ball.
I look forward to trying more (all) of your wonderful products. I will be letting the manager of the health food store that they need to promote and stock more of your foods.

Incidentely, I have been dying for ravioli, which I have never found gluten free. My boyfriend I decided to try making it, and could'nt find much online about fresh gluten free pasta. Suddenly he said "what about the pizza dough?" I have NEVER made fresh ravioli before, gluten free or not. Anyway, I tried it. It was AWESOME! I had to write to let you know how much I enjoyed your pizza dough several nights ago. I have a wheat allergy and a boyfriend who pretty much subsists on wheat items. We've tried making pizza with other gluten-free dough, and while it was still a treat for me, it was nothing to write home about. However, last weekend, after almost two months of recuperation from very painful hand surgery (which, for a calligrapher, is terrifying), I was in a deep funk and in need of a pick-me-up. So we thawed your dough on Saturday night, and on Sunday evening I one-handedly (with a little help) made our own pizza. I unashamedly ate my entire half with such gusto that Paul couldn't stop laughing with delight at seeing me happy for the first time in a long time. Just being able to share a pizza with him while watching a movie made me feel almost normal. Thank you so much for a wonderful evening; we're going to have a regular pizza night from now on, and I look forward to trying your other products as well.

First,
let me tell you that I have had a life threatening allergy to wheat and rye for approx. 6 years. I am 37 years old and this obviously came as quite a surprise to me and my family. I live with a wife and one son who are both fatally allergic to nuts, so I was already familiar with the trials and tribulations of dealing with allergies and over the counter foods. I am visiting relatives in New York for the holidays and had the sheer joy and pleasure of experiencing your dough balls. They were unreal. Not only were they the closest thing to real bread that I have eaten since my allergy was discovered, but they were better. My mother in law makes a thing called ham bread. She rolls ham and cheese in the dough and bakes it. How wonderful to have it again. I am very excited to try your other breads. I have not found one yet that doesn't fall apart as you smear on the mayo or just try and cut it in half. Once again, thanks again for all your doing to give celiacs and wheat intolerant people like me a chance to enjoy good bread alternatives.

I honestly do not know who you made happier, myself and my Dad who suffer from Celiac or my husband and Mom who rarely get to eat pizza anymore because they live with celiac sufferers. At last, a Gluten Free apple pie, and it's delicious. The apples aren't too sweet. The crumb topping is crunchy. And it came by UPS, ready to pop in the oven. Thanks Gillian's. Oh, and the "everything" dinner rolls are a big hit here too! You have a new fan.

After 3 years trying different breads and not finding any thing close to real bread. I happened to see your French bread at a store that has gluten free products. Well, the rest is history. Your bread is delicious and is so close to actual bread made with regular flour. I no longer feel deprived of not being able to eat bread. Also have bought the Cinnamon Raisin bread and it is also delicious. Thank you for providing this product.
